Local couple opens food truck to serve underserved area in Pocatello


POCATELLO — Martin Sanchez and his wife, Angie Ramirez, moved their family from American Falls to Pocatello last summer. They soon discovered that the area they now lived in did not have many food options in the immediate vicinity.

People staying near Constitution Park in southwest Pocatello have to drive downtown to get food, Sanchez said. So he and his wife decided to remedy that, opening El Gallo Mexican Food this week.

“I enjoy cooking,” said Ramirez, the truck’s chef. “This area doesn’t have any, and I care about the people here — they work long hours, so they want something quick and easy and especially delicious.”

The El Gallo, which can be found parked near the corner of 5th Street and Jason Avenues, is easily found by people who live in that area. Located off Interstate 15, walkable from surrounding neighborhoods, it is open Monday through Wednesday, 7 a.m. to 7 p.m., Thursday, 7 a.m. to 3 p.m., and Friday and Saturday, 7 a.m. to 5 p.m.

Sanchez told EastIdahoNews.com that residents have already expressed their gratitude for their decision to open in their first week of operation.

While their menu features many popular Mexican dishes, EastIdahoNews.com asked the couple about their decision to name their enchilada dish “Mexican Enchiladas.”

As Sanchez explained, their enchiladas are made the traditional way in Queretaro, a state located in central Mexico.

Instead of being drenched in cheese and salsa, El Gallo’s enchiladas are made using homemade tortillas slathered in salsa and topped with lettuce, tomatoes and carrots, Ramirez added.

Sanchez and Ramirez are once again looking to fill the gap in available dining options, opening early and serving breakfast burritos from 7 to 10 a.m. daily.

Although their work is less than a week old, Sanchez and Ramirez are already preparing to give it a go. Sanchez said they look forward to making their food available for order through DoorDash and Uber Eats in the near future.

Additionally, it can be scheduled to meet the needs of public or private events.
